I was in the mood for real comfort food. Makes 2 small servings. 1 1/2 turkey sausages, crumbled. I had the hot kind and it was way better than expected! I recommend the hot kind a few sliced scallions 1T. margarine 3T. flour salt and pepper and a little veggie stock base/bouillion if possible 1c. warmed plain soy milk can of biscuits, baked. The Pillsbury kind has a teeny amount of dairy IIRC. Find a dairy free kind if you are sensitive.
Brown the sausage in a small saute pan. Add scallions just before it is done. Remove, drain and wipe pan. Set sausage aside. Add margarine to pan and melt then add flour and stir a couple minutes. Add a little milk and stir to a paste then add the rest gradually while stirring with a whisk. Season and whisk until it is thickened. Add the sausage back in. Cut biscuits in half and pour on sauce. I served this with creamed corn.
