Crispy baked salmon with chile rub

This recipe is really simple and really lets a very nice tasting piece of fish shine through! Easy too, only takes 15-20 mins.

Serves 2.

1 large salmon fillet sliced in half (so about 3-4 oz piece per person)
1 tbsp egg whites (about 1/2 a large white)
2 tsp chile paste (such as McCormick's Chile Spice Blend) (this is already fairly spicy but you could definitely use more than 2 tsp if you like!)
bread crumbs
lemon juice

Mix the egg white with the chile paste and stir well. Then soak the salmon in the mixture for a few mins, rubbing the salmon with the mix and mixing it around to make sure it's all nice and coated.

Place salmon on a pan covered with aluminum foil (helps with cleanup) and pour some of the egg white chile mixture on to the fillets (see, this could get messy). Sprinkle with bread crumbs until thinly but evenly coated on one side.

Bake in 425 F oven for about 10 mins, then swith the oven to broil (high) and transfer the pan to the top rack; broil for about 5 mins or until the bread crumbs get nice and crispy but before they burn.

Drizzle generously with lemon juice before serving. Great with baked potato "fries"!
