CINNAMON RAISIN BREAD PUDDING

1 c fat free or lite soy milk (vanilla)
2 egg beaters
1/4 c + 1 tbsp sugar
1/2 tsp vanilla extract
8 sl cinnamon-raisin swirl bread, cut into 1 inch cubes

1. Preheat oven to 350. Spray 1-1/2 qt shallow baking dish w/nonstick spray.

2. Combine the milk, eggs, 1/4 c sugar and vanilla in lg bowl and mix well. Stir in the bread cubes and let stand 5 min stirring occasionally. Pour into baking dish.

3. Sprinkle the top with remaining 1 tbsp sugar. Bake uncovered until lightly puffed and golden and a knife inserted in the center comes out clean--25-30 min. Let stand 15 minutes before serving warm.
