Lemon Lime Tofu Zinger

2/3 cup (150 mL) Each granulated sugar and water
2 Each lemons and limes, grated and squeezed to make 3/4 cup (175 mL) juice and 1 tbsp (15 mL) rind
1 Pkg (12 oz/340 g) soft silken tofu and juice; stir in rind

Simple Syrup: In saucepan, bring sugar and water to boil, stirring to dissolve sugar. Let cool completely.

Wash, prepare lemons and limes and purée with tofu and juice to make Fresh Fruit Purée. Mix with 2 batches of Simple Syrup.

Freeze in shallow metal cake pan for about 4 hours or until firm. Break into chunks; purée in food processor. Pack into airtight container and refreeze for 4 hours or until firm or for up to 2 days. (Or freeze in ice cream machine according to manufacturer's instructions.)
