Bananamarmelade 2 lemons (zest and juice) 4,410 pound banana 2,205 pound sugar (with pektin if you can find it) 1-2 tsp minced ginger
Peel and cut the bananas into smaller bits. Put bananas and lemonjuice in a pot and boil. Add the sugar and simmer for 2 minutes. Put the pot aside and take off the foam. Let it rest 5 minutes and and the lemon zest and the ginger. Put the marmelade in really clean yars and keep in the fridge.
