Favorite new banana bread       07/27/03 03:03 PM Edit Reply Quote BarbaraS Reged: 02/12/03 Posts: 1939 Loc: Wisconsin 2 c Mashed bananas 1 tb Grated orange Rind 1/3 c Orange juice 6 Eggs whites 1 c Packed brown Sugar 1/3 c Vegetable oil 2 1/2 c All-purpose flour 1 c Chocolate chips (omit if you can't eat chocolate) 2 ts Baking powder 1/2 ts Baking soda 1/2 ts Salt 1/2 ts Nutmeg In bowl, blend bananas, rind and juice. Beat in eggs. Stir in sugar and oil. Combine flour, chocolate chips, baking powder and soda, salt and nutmeg; stir into banana mixture just until blnded. Pour into 4 greased 5-3/4 x 3-1/4-inch loaf pans. Bake in 350 degree F oven for 45 to 55 minutes or until tester inserted comes out clean. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack. I make two loaves with this recipe. I put chocolate chips in one for the kids and leave the other plain. Print     Remind Me     Notify Moderator
