Quorn chilli

I've tried to adapt a favourite meal of my MIL's here. Seems to have gone down very well so far!

This makes enough for 2 very large portions or 4 small ones.

150g Quorn mince.
1 small onion, finely diced.
1 green bell pepper, diced.
1 cup sliced mushrooms.
1 tbsp olive oil.
1 tsp fajita spices (add more to taste or use chilli, cayenne pepper and paprika).
1 fresh tomato, chopped.
1 tin (about 400g) Peeled Tomatoes.
1 tin (about 400g) Red Kidney Beans...I pureed 3/4 of the beans - I guess you could vary this according to tolerances.

Rice or bread to serve with it.

- Heat oil in a medium saucepan.
- Add onion and peppers and cook until onion starts to turn brown and soft.
- Add mushrooms and cook for a few minutes more.
- Add the Quorn mince.
- Add the spices and cook, stirring for 5 minutes.
- Add the tinned tomatoes, pureed and un-pureed beans and fresh tomato.
- Cook for about another 5 minutes, adding more spices to taste or water if it gets too thick.
- Serve with rice or fresh white bread.
