this is the recipe I'm going to make to take to the get together at Heather's

Here goes. The sweet Potato recipe is an adaptation of one in Cludia Rodin's book "THe New Book of Middle Eastern Food", Page 299. She is currently one of my favorite foodies.......



Sweet Potatoes Morroacan Style

2 onions chopped

2 tablespoons extra virgin olive oil (or spray pan and use less)

8 - 10 cloves garlic--smushed or chopped

3 tomatoes peeled and chopped--or 1 15 ounce can chopped tomatoes

a chunk of ginger---sliced and squished in the garlic smusher or just used as is--it's not daddy's favorite thing to find a chunk of ginger in his food. Some folks don't mind.

2 pounds sweet potatoes, peeled and chunked in 1 inch pieces

season with groound chili, cinnamon, cumin and salt if desired.

2 cups of broth

Fry the onions in the oil until soft. Add the garlic and when the aroma arises, the ginger and spices.

Put in the sweet potatoes and enough broth or water to at least half cover the potatoes. Add the chili.

Cook uncovered for aboout 20 minutes, until the potatoes are fork tender and the liquid has almost disappeared. Make sure that the potatoes have been turned and coooked throough.

Serve hot or cold. Reheat in oven or microwave. Serves 6



That's it take it from there and enjoy. This also works with carrots.
