Thai noodles in Peanut Sauce
      02/24/03 07:51 AM

This recipe is taken from Looney Spoons by Janet and Greta Podleski. It's a fabulous low fat book by Canadians. Anyway, this has a yummy, creamy peanut sauce that I love. I make this when I miss creamy pastas.

Thai It! You'll LIke It!
12 ounces uncooked fettuccine or linguini
2 cups sliced sweet red pepper (finely in long strips)
1 cup snow peas, trimmed and halved
1/3 cup chopped green onions
1/2 cup low sodium, reduced fat chicken broth
2 teaspoons sesame oil
2 tablespoons reduced-fat peanut butter
1 1/2 tablespoons reduced-sodium soy sauce
1 tablespoon white or rice vinegar
1 teaspoon grated ginger root
1 clove garlic, minced
1/2 teaspoon crushed red pepper flakes
1 pound cooked shrimp (or I use cooked chicken breast)

Cook pasta. Drain and keep warm.
Prepare sauce. IN large saucepan, combine al ingredients except shrimp. Mix well, bring to a boil. Reduce heat to medium. Cook and stir 3-4 minutes, until vegetables are tender-crisp and sauce is bubbly and slightly thickened.
Stir in shrimp and cook just until heated through, 1-2 minutes. Do not overcook or shrimp will be rubbery. Toss hot shrimp sauce with pasta and serve immediately.
