Haven't tried these yet, but it sounds like the perfect IBS dessert - I didn't even have to modify it!
From Low Fat and Loving It by Ruth Spear
Gingered Bananas Serves 4
3 to 4 large, just-ripe bananas (about 1 1/2 pounds) 1/4 teaspoon powdered ginger 1/4 cup sugar 1/4 cup water 2 tablespoons lemon juice
Slice the bananas into 1/4-inch rounds. Arrange half the rounds close together in a shallow glass serving dish, sprinkle with half the ginger, and then repeat with the second layer of bananas.
In a saucepan combine the sugar and water and simmer until the sugar dissolves, about 3 minutes. Add 2 tablespoons lemon juice, pour the syrup over the bananas, and let the fruit cool. Chill before serving.
