The left overs of this deliscious loaf make great sandwiches, especially with a litte kethcup on them and a slice of onion. Hopefully brown rice is ok for u all.
1 lb medium tofu, sliced,drained between towels 1 cup cooked brown rice 2 egg whites 1/4 cup very fine chopped onions 1 tbsp oil 1 tsp parsley 1/2 tsp sage 1/4 tsp oregano 1/4 tsp thyme 1/4 tsp garlic powder 1/8 tsp pepper salt to taste
Sauce: 1 8-oz can salt free tomato sauce 1/2 tsp oregano 1/8 tsp garlic powder
heat oven to 350. Lighlty spray a 4 X 8" loaf pan. Place tofu in large bowl and mas well with fork. Add remaining loaf ingredients, mix well. Place mixture in pan, press firmly with the back of a spoon. Bake 45 minutes. While loaf is baking, combine sauce ingredients and heat in small pan. Invert loaf onto plate and serve with sauce.
