I love this! It is so homey. DH doesn't like when we have it because he doesn't like comfort food at all, but don't let that worry you; he is weird.

Tamara's pot pie with leeks and mushrooms
Step 1
dice carrots or slice baby carrots about 1c.
large dice gold or rosey fleshed potatoes about 3 pot.
small dice about 5 small parsnips
place the above in a large saute pan and add salt and pepper. You can add some margarine and saute first or just add 2 cans FF chicken broth and simmer until tender.
Step 2 preheat oven to 400 (200C.) I forgot that step.
Step 3 while veg cooks
slice 2 large leeks vertically and then slice. rinse well
Slice a package of cremini mushrooms thickly
mince 3 large cloves garlic
mince some thyme, rosemary and parsley
when veg is tender put in a large baking dish 9x13 and saute the leeks etc in a little margarine. add salt and pepper
Step 4 while leeks cook
dice 5 chicken breasts
also mix in bowl: 1c light rice milk, 2c. reduced fat bisquik and 1/2c. egg beaters or maybe 3 egg whites (it calls for 2 eggs but I just used 2 whites and it was fine but not golden. so do as you please.)
Step 5 pour out leeks into baking dish and cook chicken until cooked through.
Step 6 thicken the stock- this can be done by adding 3T. flour to chicken and pouring everything back into the pan OR by adding a little cold broth with 3 spoons cornstarch in it to the initial veg and broth. Either way stir until thick and pour everything into baking pan and top with biscuit dough. Bake for half hour.
