This recipe was "Pork Roast" with Golden Vegetables, but I bet chicken would work just fine. Or even turkey breast.
Chicken with Golden Vegetables Adapted from Betty Crocker New Slow Cooker Meals September 2001
2 1/2 - 3 lb boneless, skinless chicken breast 1/2 teaspoon salt 1 teaspoon olive oil 2 acorn squash (1 to 1/2 lb each), each cut into 8 wedges - for easy slicing, pierce the squash with a fork and microwave on High for 2 minutes. 4 large sweet potatoes or yams (8 ounces each), peeled and cut into 1-inch pieces 1/2 cup Apple Butter 1 tablespoon cornstarch 1/2 teaspoon pepper 1/2 teaspoon ground allspice 1/4 cup raisins
1. Sprinkle chicken with salt. Heat oil in 10-inch skillet over medium-high heat. Cook in oil about 10 minutes until brown on all sides.
2. Place chicken in 3 1/2- 6 quart slow cooker. Place squash and sweet potatoes on top of chicken. Mix Apple Butter, cornstarch, pepper, and allspice. Pour into slow cooker.
3. Cover and cook on low heat setting 7-9 hours or until chicken is tender. Remove chicken and vegetables from cooker. Stir raisins into sauce. Serve sauce with chicken.
