Sorry it took a while for me to respond, I was reading all about Soy Coffee! I love the picture of your puppies - they are adorable!

Anyway - here's Heather's Great-Great Grandmother's Chocolate Applesauce Cake/Bread (I cut the recipe in half
in order to make only 1 loaf)

Preheat Oven to 325
Sift together in large bowl and stir thoroughly to combine:

2 cups all-purpose unbleached white flour
2 teaspoons baking soda
1/4 cup unsweetened cocoa powder
1 tablespoon cornstarch
1 cup of granulated sugar (I actually omit the sugar)
1/2 tsp cinnamon
1/2 tsp cloves
1/2 teaspoon nutmeg
1/2 teaspon salt

Whisk together by hand thoroughly:
1-3/4 cups unsweetened bottled applesauce
1/4 cup canola oil
1 tablespoon vanilla
1 cup diced raisins

Add the wet ingredients to the dry with a few swift strokes of a wooden spoon until well blended. (Usually my batter is a little dry so I add a little water). Pour batter into non-stick loaf pan sprayed with cooking oil. Bake for 1 hour or until toothpick or cake tester inserted into the center of the loaf comes out clean. Cool on rack.

I have found that this recipe is very forgiving - (i.e. if I don't have cloves or nutmeg, I just replace it with cinnamon)

There are loads of great recipes in Heather's book - you should get it if you can, and her book The First Year IBS has helped me from day one and keeps me on track (I ordered mine from Barnes & Noble and have given my Doctor the Heather's name and the name of her books).
