Unfortunately, it's not only the fat content in red meat that's a problem, but also the proteins that make it difficult to digest. This is why even lean red meat is on the triggers list. From the IBS Diet FAQs :
"The major trigger foods - red meats, dairy, egg yolks, fried foods - are high in fat and, for the meat, dairy, and eggs, also have proteins that are very difficult for the body to digest. They can basically grind digestion to a halt for IBS-constipation folks, or send it spasming out of control for the diarrhea-prone, and result in severe attacks either way."
How long have you been following the Eating for IBS guidelines? Are you stable? If you're not stable, then you wouldn't be able to say venison doesn't bother you. Triggers don't always have an immediate negative effect. My understanding is that triggers can also have a cumulative effect, making it more difficult for you to manage your overall IBS symptoms.
