HFCS, sugar and free fructose

In sugar, sucrose, the fructose is bound to a glucose molecule (via an oxygen molecule). In HFCS fructose is not bound to glucose or any other sugar molecules; it is free fructose. The problem arises when there is more fructose than glucose in the food. HFCS comes in two forms 42% and 55% fructose. Unfortunately the food labelling laws do not require the manufacture to indicate which form they used. Fructose in honey and some fruits & juices (e.g apples, pears) can also present a problem. High levels of fructose can cause bloating, gas and diarrhea even in non-IBS individuals.

PS - I have been experimenting with adding glucose to homemade jellies made from fruits with high fructose content. I add enough glucose to ensure that the jelly contains more glucose than fructose. I use dextrose derived from corn as my source of glucose. I purchased it from a local HFS. This year I am experimenting with homemade grape jelly.
