I came across this recipe today and thought it sounded good. It has a five star rating. It looks all good...just sub 8 egg whites for the 4 eggs. Carrot Pudding

Thanks, I have printed it and stored it for when I get a chance to try it! Sounds good... I also thought you could use pumpkin or sweet potato too.

I thought the same thing. I noticed one of the reviewers said it tasted like sweet potato. You may make it before I do though, since it requires the oven and it's getting warmer on this side.
