Peppered Rice

Peppered Rice
Serves 4


1 Tbls. Annatto oil
1 small onion, finely chopped
½ red bell pepper, finely chopped
½ yellow bell pepper, finely chopped
1 minced garlic clove
1 cup long-grain rice
3 cups water
1Tbls. Finely chopped fresh cilantro
1 tsp. Salt
¼ tsp pepper

Heat the annatto oil in a large saucepan over medium heat. Add the onion, peppers and garlic; stir 2 minutes. Add the rice, salt and 3 cups of water. Bring to a boil, cover and reduce heat to low. Cook 18 minutes or until rice is tender. Remove from heat; uncover, and drape a clean kitchen towel over the pan 3 minutes. Fluff rice with a fork, and add the cilantro. Adjust seasoning with salt and pepper if needed.

This recipe sounds great! But, what is Annatto oil? Can I substitute Canola oil for it? Or Olive oil? Please let me know, so I can try it asap! Thanks!

I did a search on Google, and turned up mostly recipes for how to make it, heh. If I'm remembering correctly, annatto seeds are more for color than flavor - annatto oil is made by simmering annatto seeds in vegetable oil, till it's an orange-red color. I think you could use canola oil, it might just be a little less colorful.

Thanks for the info. I am going to try it with canola oil. That annatto oil seed simmering thing is just way too much work for me!

I'm sorry I should have typed in canola or olive oil. Those are the only two oils I use.
