Greek Chicken Burgers

Greek Chicken Burgers
(Makes 4 burgers)



These are simple and very unique burgers. The pitas really give them a Mediterranean flair!

Ingredients:
1 lb ground chicken (I used ground turkey and it still worked great)
2 Tablespoons chopped fresh oregano (or 1 tsp dried)
2 teaspoons finely grated lemon rind
1/2 teaspoon salt
1/2 teaspoon pepper (I used less)

TOPPINGS
lettuce leaves
sliced tomato
sliced cucumber (I omitted due to personal taste)
sliced black olive (I added some sweet pickle relish instead!)

2 pita pockets

1. Spray grill with cooking spray and preheat to medium.
2. Using your fingers, gently combine burger ingredients in a large bowl, until blended.
3. Form into burgers about 1/2 inch thick.
4. Grill burgers for about 6-8 minutes per side or until juices run clear.
5. Toast pitas on the grill during the last 3 minutes (be careful not to leave them on too long--I toasted mine until they were too crispy!).
6. Cut pitas in half; place burgers into pockets and fill with toppings.

just wanted to say that i've tried these twice now, and they're really good and easy to make. we topped them with lettuce, tomato, and cucumber slices and the whole family likes them.

Thanks for the tip. I love Kree's Peking burgers and these will make a great alternative now that grilling season is almost here.

These are delicious! I have a new favorite burger - and they're so easy to make.

We used one pita per burger - cut the pita and the burger in half - and stuffed the pita with lettuce, tomato, and cucumber (which was great, much to my surprise). I did find it just a touch dry so next time I think I'll toss the veggies with just a tiny bit of salad dressing or just a little oil and vinegar before stuffing. Also if you like soy yogurt this would probably be wonderful with some of that added to the veggies. And next time I'll definitely try the olives.

Since grilling season is over I made these inside tonight. Preheat the oven to 350 degrees. Pam a baking dish with lid. (I used my big Corningware casserole.) Place the burgers in the baking dish, cover, and bake for 30 minutes. Wrap pita in aluminum foil and place in oven for about the last 5 minutes to heat up.

The burgers cook perfectly and stay nice and moist. Thank goodness - I'd hate to have to wait for summer to roll around before having these again.
