LOOKING FOR a IBS safe Quiche recipe for Easter

I'm looking for a Quiche recipe with either a rice, potato, or safe bisquick crust that someone has tried. Of course also IBS safe.... I would like to make once for Shane & I to see how it turns out and then serve for Easter.

Could you just make substitutions for a recipe you already have? We aren't really quiche people so I can't help you but I was thinking it might be easy enough. I did check the bisquick box when I was at Sam's a few weeks ago. It doesn't have dairy in it, just a little too much fat. I was wondering if maybe the reduced fat one might be low enough for you to use. Maybe Kree will be able to help you.

I don't have a recipe...Mom just requested that we have some for Easter. So, I was gonna make two for them (with all that none ibs safe stuff in it) and one that is ibs safe and anyone who wants it can.

The only one I recall ever having YEARS ago had bacon & cheese in it.

Shell, how would this work? I have a warning... I haven't tried it since starting this diet, so the substitutions I made here are untried. I made it with whole eggs and full fat Bisquick. But I don't see why it wouldn't work this way!

Impossibly Easy Quiche
(Makes 1 quiche)

1/2 lb veggies (sliced mushrooms, chopped broccoli, etc.--can mix and match)
2 cups soy milk
1 cup shredded soy cheese (swiss or cheddar)
8 egg whites or 1 cup Egg Beaters
1/3 cup finely chopped onions
1/2 cup reduced fat Bisquick baking mix
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/2 teaspoon thyme (fresh is best)

1. Preheat oven to 350.
2. Lightly spray a 9-10 inch pie plate with non-stick cooking spray.
3. Sprinkle veggies, soy cheese, and onion evenly over bottom of pie plate.
4. Place remaining ingredients in blender, cover, and blend on high for 1 minute (or whisk by hand until mixed well).
5. Pour into pie plate.
6. Bake until golden brown and knife inserted in center comes out clean (50-55 minutes).
7. Let stand 5 minues before cutting.
8. Refrigerate leftovers.

Here's another good one, Shell. Once again, it hasn't been tried exactly as is, so you'd be a guinea pig! I'm sure you could use other veggies in this one too.

Impossibly Easy Chicken 'n Broccoli Pie
(Makes 1 9-inch pie)

1 (10 oz) package frozen chopped broccoli, thawed and drained (or 2 cups fresh broccoli florets)
1 1/2 cups shredded cheddar soy cheese (6 ounces)
1 cup cut-up cooked chicken
1 medium onion, chopped (1/2 cup)
1/2 cup reduced fat Bisquick baking mix
1 cup soy milk
1/2 teaspoon salt
1/4 teaspoon pepper
4 egg whites or 1/2 cup Egg Beaters

1. Heat oven to 400ºF.
2. Lightly spray a 9-inch pie plate with non-stick cooking spray.
3. Sprinkle broccoli, 1 cup of the soy cheese, the chicken and onion in pie plate.
4. Stir Bisquick mix, soy milk, salt, pepper and egg whites until blended.
5. Pour into pie plate.
6. Bake 30 to 35 minutes or until knife inserted in center comes out clean.
7. Sprinkle with remaining soy cheese.
8. Bake 1 to 2 minutes longer or just until cheese is melted.
9. Cool 5 minutes.

Spinach Quiche new

This is a Bisquick recipe that I used to make a lot; it originally called for broccoli, but I preferred spinach. It comes out equally as well either way:

SPINACH "QUICHE"

2 pkgs. (10 oz. ea.) frozen chopped spinach, defrosted
1 cup Bisquick
1 cup soy milk
2 eggs (use "Egg Beaters")
1/2 teaspoon salt
1 cup shredded soy cheddar

Heat oven to 325. Spray souffle dish or 1-1/2-qt. casserole with Pam. Drain spinach. Beat baking mix, milk, eggs and salt with hand beater until smooth. Stir in spinach and cheese. Pour into souffle dish and bake until knife inserted halfway between center and edge comes out clean, about 1 hr. Serve immediately.

I've never seen soy swiss? Is there a brand that I can look for? Heather you are near me...where have you found it?

Here's another Bisquick recipe from way back. I made it often because hubby and I loved it. It's very much like a Quiche, and it's excellent.

EASY GARDEN VEGETABLE PIE

2 cups chopped fresh broccoli
1/2 cup chopped onion
1/2 cup chopped green pepper
1 cup shredded soy cheddar
1-1/2 cups soy milk
3/4 cup Bisquick
3 eggs (use Egg Beaters)
1 teaspoon salt
1/4 teaspoon pepper

Heat oven to 400 degrees. Lightly grease 10-inch pie plate. Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling. Add broccoli, onion, and green pepper; cover and heat to boiling. Cook until amost tender, about 5 minutes; drain thoroughly. Mix with cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes before cutting. Garnish as desired. Refrigerate any remaining pie.

6 servings.

Well, there I go making assumptions. I'm glad you found some recipes. I have only had quiche once. My mil made it for my baby shower, 6 years ago. I don't even remember what was in it. I know Tory hates them so I have never even tried making one. Glad to see Bev and Kree could help you.

Oh and can I just say bacon and cheese sounds so good right now. Wish I had some turkey bacon.
