Sunday brunch Casserole

Another easy dish for breakfast!!
1/2lb IBS safe bacon like turkey extra lean
1/2 cup chopped onions
1/2 cup chopped green bell pepper
12 eggs ( use egg beaters)
1 cup soy or rice milk
1 package of frozen hash browns thawed or make your own
1 cup cheddar soy cheese or rice cheese shredded
(can also use tofu)
1 tsp salt
1/2 tsp ground pepper
cooking spray

In a skillet cook bacon unitl crisp pat all excess grease cool and crumble set aside. In another skillet saute
onion, green pepper,until tender.Beat eggs and milk in a large bowl. Stir in hash browns, cheese, salt, black pepper, onion/ green peppers and bacon. Trasnfer all to a 13x9x2 sprayed baking dish. Bake uncovered for 35-45 minutes at 350 degrees or until inserted knife comes clean.
Serves 6-8. Have slice a slice of toast as a side and a nice cup of your favorite hot drink.

I made this this morning for us and it was really good. I acutally used Turkey Sausage, cooked it in my George Foreman grill and then baked it all together. It was super easy and smelt great while it was cooking!

I made this for dinner tonight. Very very yummy!!! I like it so much that I had seconds. Hope I don't end up with tummy probs!

Hi Sherr,
I'm kind of new to this board even tho I have been using Heather's books and advice for several years and I am so grateful for her!!! Anyway, your recipe looks terrific, but what can I use for cheese if I can't tolerate any soy products (except a scant teaspoon of tofutti in the mornings)? I would love to make this recipe, but without cheese in it I don't think it will work. Any ideas folks???
