I found this list of substitutes in an issue of Cuisine at Home...
For white wine, use white grape juice; chicken or vegetable broth; ginger ale
For red wine, use grape juice; cranberry juice; chicken, beef, or vegetable broth; flavored vinegar' tomato juice
For brandy, use white grape juice; cherry, peach or apricot syrup
For beer, use chicken, beef, or mushroom broth; white grape juice; ginger ale
For rum, use pineapple juice with almond extract or molasses; vanilla extract
For vodka, use water; apple cider or white grape juice mixed with lime juice
For sherry, use vanilla extract, orange or pineapple; coffee
