Easy Black Bean Soup

Easy Black Bean Soup

1 cup jarred or fresh tomato salsa (plus extra for garnish)
2 15 1/2-ounce cans black beans, drained and rinsed
2 cups RF veg or chicken broth
Sour cream (1 dollop per serving) *use soy or other alternative
1 lime (optional)
Dry sherry (optional)

Heat the salsa in a large saucepan over medium heat, stirring frequently, for about 5 minutes. Stir in the beans and broth, then heat to boiling. Reduce heat to low. Cover and simmer 15 minutes. Cool slightly, then spoon half (or all, in small batches) the soup into a food processor or blender and puree. Return the pureed soup to the saucepan and heat through. Serve with sour cream, additional salsa, and a squeeze of lime (if using). Or stir 1 to 2 tablespoons dry sherry into each serving.

Yield: Makes 4 servings



The recipe did not call for it, but if you can tolorate corn, you can throw a little in there, or maybe even a small can of creamed corn

Ooh, that sounds delish! And I even have everything but the sour cream on hand. I'll have to try this this week!

This does sound easy--even for me! Would be tasty with some cornbread. I had a similar soup once and it was served with ginger lemonade--delicious!

Shell- Do you puree the black beans to make them easier to digest? I guess I always thought of bean soup with the actual beans in them. I know hubby likes bean soup but I wonder if he would like it like this. Maybe I'll have to find out!

You can puree just part of it if you like... I've had it both ways.... my Ex-Boyfriend of 8 years was a Cuban... and his family made it both ways for us.

Shell,
I made this last night & OMG it was soooooooo good. I pureed the entire batch since I normally don't do well with beans & made some rice to add to it for SF. I also used a chipolte salsa so it had a real kick to it!
BTW, where do you buy your chipolte powder seasoning? I've been looking in the stores & all I find are Chipolte sauces.

I found Chipotle seasoning in the aisle with all the other seasonings. Most local grocers will carry it. Also what kind of rice did you use?? I am really thinking this sounds yummy!!!

I used just plain ole' white rice. I had wanted to use something different but hubby went to costco & since he knows I like white rice, bought me like a 20lb bag of the stuff!!!! His heart was in the right place but now I'll have to use that stuff up before I buy anything else. You really should try this. I also made some white tortilla chips & used that to dip in last night.
I'll have to keep looking for the spice. You'd think in Texas that would be a no brainer!
