The yummiest mashed potatoes!!

I was fooling around with some recipes today and made the BEST mashed potatoes ever.. (this is especially good if you love broccoli, but have a hard time digesting it)

2 russet potatoes
1 bunch broccoli
1/2c. chicken broth
3tbsps sour cream (could use substitute)
salt and pepper

Steam broccoli seperate until very tender.

Boil cubed potatoes seperate until tender.

Combine broccoli, potatoes, sour cream and chicken broth to a boil, and beat with beaters (you could also use a masher) until broccoli is completely mashed and seperated.

add a little salt and pepper and YUMMM-O

I do this all the time with spinach as broccoli is offensive to me personally, but without sour cream. I put it in the food processor. I love adding dill, too. Lots of sea salt. A little stoneground dijon mustard and a twist of balsalmic vinegar or just unseasoned rice vinegar. I love doing it with the russets as they don't absorb much of the cooking liquid and it makes a huge difference. It tastes really good with swiss chard instead of or combined with spinach or even arugula! Dandelion and asparagus work well, too. Oh, I forgot--watercress is wonderful whipped with potatoe. It's nice, too thinned out with more broth as a soup.
