Sounds yummy, but does the veggie oil bother your IBS?

...the it sould be fine. Just watch the fat levels and check labels for HFCS (but maybe you have to check for this with diabetes anyway?) and any artificial sweeteners.

I think these sound pretty low in fat- depending on how many they make. 1/4c PB reduced fat PB would be 24 grams of fat and oil would be 21 grams so that is 45 grams and if it makes lots of cookies- quite possibly 2 dozen then it is less than 2 grams each. Dang I forgot that oatmeal has some fat- I always forget that!
LOL about dogs. I give PB dog biscuits to dogs all the time. P.S. I thought water and oil didn't mix LOL.

So I tried these out today and unfortunately they didn't really turn out right. I made the dough last night, refrigerated it over night, and baked them this morning. They turned out like hard pieces of dough. Do you think there should be some sort of rising agent in the mixture to help them when they bake? They tasted decent...just hard and flat. Any suggestions???

Is there something that can be used to substitute the oil? They sound fantastic. I want to give them a try this weekn
