Yum! Sweet Cinnamon zucchini bread

Hi everyone,
I made the sweet cinnamon zucchini bread today, and the banana bread with orange juice and chocolate chips. They are soo good! I did not put any oil in the twoo breads, and they turned out just fine.

I made the zucchini bread from Heather's book the other day as well. I followed the recipe exactly except I used grated yellow squash instead of the zucchini. It turned out great.

This was the one recipe I tried from the cookbook that I didn't like. Maybe I overcooked it, but it was dry and the zucchini was still "green." (didn't seem like it was cooked.) Maybe I did something wrong, but it didn't have much taste.

I love the Zucchini bread and have made it several times. I have even made muffins and kept them in the freezer to snack on from time to time.
On another topic: I noticed the the user 'beaglelover' is in Charlotte. I too am in Charlotte and had been considering fostering basset hounds or blood hounds. I would love if you could contact me to let me know about the pros and cons of doing this. zoe@gooddharma.com Thanks!
