Made "Brer Rabbit Carrot Cake" on page 242-243 of Heather's Eating For IBS book for our Family Easter.... I can't wait to dig in!!  I just tinted the coconut with green food coloring and I used wrapped chocolates so they would not get soggy or sticky, etc., depending on what others might use like jelly beans, gummy stuff, etc.

That is one of the prettiest cakes I've seen!!!
I hope you're sharing it with lots of people....and not saving it for just you and Shane.
You can save the chocolate eggs and coconut for me...LOL

I have a hankering for a carrot cake, (GF of course, which is no problem converting) but WITHOUT pineapple. Don't get me wrong, I adore pineapple, just not in my carrot cake.
Anyone have a safe CC recipe w/o pineapple? thanks, Kandee

hey I make heathers carrot cake replacing sugar with brown rice syrup and make it with brown rice flour and also instead of pineapple, use more applesauce - works out amazing!!

Great ideas.....all of them. I use rice syrup when I think of it, otherwise it sits in the back of the refrigerator. Love using brown rice flour too.......the white stuff is to grainy by itself but ok if mixed with the brown. And (more) applesauce? Hey, I love the stuff...could put it on top of pizza and be happy..LOL
