LENTIL SOUP

2 tablespoons canola oil
1 pound mild Italian sausage (I substitute turkey sausage)
1 onion, chopped
2 garlic cloves, chopped
1-1/2 cups dried lentils, rinsed
6 cups chicken stock (I use home made, but canned is okay)
1 bay leaf
2 carrots, chopped
3 celery stalks, chopped
Two 14-1/2 oz. cans chopped tomatoes
1/2 cup tomato paste
1/2 cup red wine
1/4 cup lemon juice
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1/2 teaspoon pepper
salt to taste

Heat oil in 4-quart pot over medium heat. Remove sausage from casings and brown sausage for 10 minutes, breaking up meat with the back of a spoon. Stir in onion and garlic, and saute for 10 minutes. Stir in lentils, stock, bay leaf, carrots, celery, tomatoes (including juice from can) and tomato paste. Bring soup to a boil, reduce heat and simmer ONE HOUR.

Remove bay leaf, and stir in wine, lemon juice, Worcstershire sauce, sugar, and pepper; simmer soup for another THIRTY MINUTES. Taste; adjust seasoning -- with salt -- if necessary.

Makes 10 servings. Per serving (based on pork sausage, not turkey): 197 calories, 11 g. protein, 8 g fat, 20 g carbohydrate, 920 mg. sodium, 18 mg. cholesterol. Lower sodium version: use sodium-free broth and reduce or omit sausage.

Oh, Bevrs... this sounds good!! I would use turkey also. I think we are gonna have this either Sunday or the following weekend.......nobody will be in my office Mon-Tues so if it "effects me" nobody but me will know!!

One question.... on the red wine...is that drinking or cooking wine?

Don't waste your good drinking wine -- save that for you and Shane, put it on the nightstand...

The cheapest red cooking wine works great.

Suggestion: don't forget the Beano!

Good advise on the Beano....I'm adding it to my grocery list now.... I'll shop on Sat for Sunday dinner, but I really think I wanna try this....

Making this for dinner tonight.... I pre-cooked the turkey sausage with the onion & garlic last night and also cut up the carrots & celery....so tonight I just have to throw then next group of stuff in and let it cook.... I can't wait.... got some rolls to have with it and yes, I go the beano!! LOL

Yummy yummy yummy yum yum yum!!! I cut it in half... and then made a bo bo and added the full pound of turkey sausage and then whole can of tomato paste instead of just 2 tablespoon... oh well..it was YUMMY!! Will have leftovers tomorrow night!! HAHA...I got Shane to eat more veggies!!

Getting Our Veggies new

I'm glad you like the soup, Shell. Yeah, it's a great way to get our veggies. It also freezes beautifully. I keep one-serving size containers of the stuff in the freezer, and when I have an attack and can't get out of bed, hubby can just pop one in the mike for himself. It's great stuff, and goes real well with BEER BREAD!

P.S.: I want more dirty icons!

Well, I cut the recipe in half...so after dinner tonight there will be none left Next time I'll make the full one and freeze it....that is a good idea, that will make it a lot easier to have on weeknight and not have to eat to late due to the cooking time needed...but it was so worth it!!

You KNOW I can't post those naughty ones!! LOL
