Indonesian Ginger Chicken...Delicious!!!!

I got this from Barefoot Contessa on the Food Network, IT IS SO DELICIOUS!!!! I've changed this recipe around a couple times... Making it alot smaller and using boneless skinless chicken breasts. I would use 8-10 breasts if using original measurments. Serve it with plain rice or fried rice...cook 1 cup (2 cups cooked) of rice with a pinch of ginger powder or 1 t of grated ginger, add 2 T of soy sauce 1/4 cup of carrots 1/4 cup of peas and/or onion make a well in pan and add 2 T of egg beaters, stir once it starts to set and until egg is cooked...yum!
Indonesian Ginger Chicken
1 cup honey 3/4 cup soy sauce 1/4 cup minced garlic (8 to 12 cloves) 1/2 cup peeled and grated fresh ginger root 2 (3 1/2 pound) chickens, quartered, with backs removed
Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinate overnight in the refrigerator.
Preheat the oven to 350 degrees F. Place the baking pan in the oven and bake for 30 minutes. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown

Sounds fabulous.... I would make one change and use only skinless chicken breast or even turkey breast.

Oh yes, I only use skinless chicken, but i haven't tried it with turkey breast! I wonder why i didn't think of that, I'll try it and let you know.
