Tofu Creme Topping

9 oz soft tofu
1/4 cup honey or confectioners sugar
2 tsp vanilla

In a blender, combine all ingredients. Blend until smooth. Chill several hours, or overnight, to blend flavors.

This topping is so creamy and is good spooned on top of fruit. It makes a elegant dessert when added to something. Fresh berries is always good.


Tofu Rice Pudding

9 oz tofu, soft
1.4 cup honey or confectioners sugar
2 tsp vanilla
1/2 tsp cinnamon
1 1/2 cups cooked brown rice
1/4 cup + 2 tbsp raisins

In blender, blend tofu till smooth. spoon into bowl and add remaining ingredients. Mix well. Chill several hours to blend well.


Chocolate Raspberry Tofu Trifle


Just in time for the holidays.

1 1/2 Ib soft tofu
1/2 cup confectioners sugar
(hope this ok)
1/4 cup cocoa (unsweetened)
1 1/2 tsp vanilla
1/4 tsp almond extract
1/4 cup reduced sugar raspberry jam or fruit only jam
8 2 1/2 x 5 " graham crackers

Have 6 x 10 pan prepared. Cut tofu into chunks and place half the chunks in blender. Blend till smooth. spoon into med bowl and repeat with remaining tofu. Add sugar, cocoa and extracts. Mix well. Spread jam on graham crackers, using 1 1/2 tsp each one. Place 4 of the crackers in the bottom of pan, jam side up. Spread half the tofu mixture on crackers. Top with remainging crackers and end with remaining tofu. garnish with almonds, if desired. Cover and chill well. Serve cold.


Orange Broccoli

Orange added to this dish gives it a real "picker upper".

1/2 cup orange juice
1 tbsp reduced sodium soy sauce
1/4 tsp ginger
1/4 tsp garlic powder
2 tsp honey
1 tbsp cornstarch
1 tbsp vegetable oil
4 cups broccoli, cut into small flowerets

In small bowl, combine orange juice, soy sauce, ginger, garlic powder, honey, and cornstarch. Mix till cornstarch is dissolved. Heat oil in large pan or wok on med heat. Add broccoli. Cook, stirring frequently, till broccoli is bright green, about 2 min. Stir on orange juice mixture, pouring it all voer the broccoli. Cook, stirring for a few minutes, till broccoli is evenly coated and sauce is thick and clear.

Hopefully these are all ok, I am sure subs can be made if needed. Have fun KREE

Shirl, how did you know these would catch my eye? Is my sweet tooth that obvious? Lol.

BTW, congrats on having one of the top 40 recipes on Zaar. Yay!

I didn't even know I had one of the top 40 LOl thanks for letting me know and yes I thought it was about time to post some new recipes, or kree would be wondering where I was.

I can't wait to try.. I was thinking of the top one on the peppermint fudge cake- YUM! t-day will have pumpkin pie (not safe), the vegan fudge recipe from ehre, and peppermint fudge cake... there was going ot be cool whip, but I can use this for me while others have cool whip...

The first one sounds like it might work for your yummy recipe you were talking about....you should try it out!

Yes I am in the process of sorting it out...promise will post soon...thanks for bringing that to my attention sinead...I also tried the vanilla flavour alpro soy dessert which I hadnt before had thought that may work but I think it s bit too sickly personally! Right...I'll have to do some experimenting this weekend!

one of my favourite indulgent treats is to take a yogurt pot sized vanilla alone and a chocolate alpro, swirl them together in a bowl and heat in microwave, then take out of microwave and crumble gingernut biscuits on top, heavy but yummy comfort food and you should really share as there is a lot in it!
