Since the Red Sox will be meeting the St. Louis Cardinals in the World Series - does anyone have a good (and safe) appetizer recipes with a St. Louis flaire?? (not that I think they will win...) Red Sox fan (AnneV)

In search of a recipe with a St. Louis flair...I found:

Upside Down Cake for Two
Mix a favorite cake mix or your own recipe. You can leave the oil out of any cake mix and it will be fine.

In a one quart microwave safe bowl or casserole dish
Melt 1 Tablespoon soy margarine, 15 seconds (you could probably cut back a bit or use applesauce)
Add 2 tablespoons brown sugar, mix well
Top with choice of fresh, canned or frozen fruit, sliced thin (Banana, peach, pineapple, apple, plum)
Add 1 1/2 cups cake batter.

Microwave on high until almost dry on top, about 3 minutes.
Let set 3-5 minutes before turning onto a place to serve warm.

Cake mix can be kept in the refrigerator for 3-5 days, so you can hve a warm cake when you want it.
