Hi - I was emailed this recipe from a reader and it sounded great, so I thought I'd post it.
Cooking Spray 1 cup Yellow Cornmeal Lite Salt Place filets on paper towels to absorb excess water. Salt lightly. Cut into four pieces for extra crispiness. Spray with Pam or other brand cooking spray. Roll in cornmeal. Spray second time with Pam. Place on sprayed cookie sheet. Cook in 450 degree oven for 30 minutes, turning after 15 minutes. Allow one large fillet for each person. We also use frozen french fries in sprayed cookie sheet, spray with Pam, salt lightly. Turn every 10 minutes while fish cooks. 2 cups of lightly breaded okra tossed with 1 tablespoon cooking oil and baked on a sprayed pizza sheet, turning every 10 minutes completes an easy meal. Family and friends who are watching calories, fat, sugar, etc. also enjoy this meal. A side vegetable salad and fruit salad dessert makes it a great guest meal. Joyce Strachan, Longview, TX
