Cajun Red Beans and Rice, with TVP

Hello All I just made the recipe from the back of a bag of TVP, and I thought it was good enough to share. It is pretty spicy so if you don't like that, or are sensitive to it, cut it back a little. I also thought it could use some salt. Here it is:
Red Beans and Rice -- a no-fat cajun treat, vegetarian style
Overnight in 6 cups of water, soak 2 cups dried red beans, kidney beans, or pinto breans. Drain and rinse well. Cook beans in a kettle with: 1 large onion, chopped 6 large cloves garlic, mashed 2 quarts boiling water
After beans have cooked 45 mn, add: 2 cups TVP granules (the dehydrated variety) 3 Tbsp. Chili Powder 1 Tbsp. Cumin Continue cooking beans until tender, 20-40 minutes. Most of the liquid should have cooked into the beans and TVP. Taste and add salt.
Meanwhile, cook brown rice according to package directions: 1 cup Brown Rice (Basmati or Short Grain) 2 cups Water 1 tsp. Salt Mix the cooked rice and beans, taste, add a pinch of cayenne or hot sauce if desired.
As I said, it was spicy but at the same time a teeny bit bland, if that's possible. I think I am just getting used to the taste of TVP (or the non-taste) and I think next time I will cook this in vegetable broth instead of water. Enjoy! Amanda
