I made this for dinner tonight and it was YUUUUUMMY!!! plus, it took literally less than 15 mins to make! great fast meal.
24 Fresh or frozen shrimp 1TBSP olive oil 4 cloves minced garlic 1tsp dried tarragon 1/2tsp dried thyme 1/4tsp old bay seasoning 1 toasted pine nut or plain flavored couscous 1 1/4 cups chicken broth sliced sundried tomatoes (to taste) chopped sliced green onions (to taste) 1/3 cup lemon juice 2tbsp melted butter (omit or use alternative) 1 6oz package of baby spinach or regular spinach *(I used regular and nuked it in the mircowave for about 2 minutes to help wilt it)* parsley and shredded parm cheese
1. Thaw shrimp, peel and devein. Place shrimp in a large self sealing bag and add oil, garlic, tarragon, thyme, and old bay seasoning. Seal bag and marinate for 1hr.
2. Prepare couscous according to the package directions using broth in place of water. Stir in tomatoes and onions in couscous. set aside. In a bowl, combine lemon juice and butter; set aside. In a large skillet, cook shrimp for 3 to 5 mins until done. Pour half of the butter mixture over the shrimp.
To serve, divide spinach among bowls. spoon couscous mixture on spinach, and arrange shrimp on couscous. Spoon remaining butter mixture over all. Top with parsley and parm.
