This recipe was actually one of the winners of the quick & easy (30 minutes or less) Lee Kum Kee recipe contest. I tried it last night, and OMG, not only is it amazingly simple, but incredibly delicious as well! I doubled the recipe and it was more than enough to satisfy 3 full grown men and myself! No wonder it was a winner. Can't rave enough about this...if you like PF Chang's wraps, try these...you might find them better (and healthier).
Low-fat Hoisin Turkey Lettuce Cups
Ingredients: 1/2 Cup Pine Nuts, 1 Pound Ground Turkey, 3/4 Cup Lee Kum Kee's Hoisin Sauce, 2 Cups Cooked Wild Rice, 1 Tb. Red Wine, 8 Lettuce Leaves (Iceburg)
Cooking Instructions: Preheat the oven to 400 F. On a cookie sheet, scatter pine nuts and toast for 7-10 minutes or until pine nuts have browned. In a large skillet, sauté the ground turkey over medium heat. Stir until turkey changes color, indicating it is cooked through. Drain and then return to the pan. Stir in the hoisin sauce and red wine and heat until the mixture starts to bubble. Then stir in the pine nuts and rice. Spoon ˝ cup of the mixture into the each of the lettuce cups. The hoisin sauce adds a delicious velvety texture (much like chocolate) without adding fat. Serve as a light dinner or an appetizer accompanied with red wine.
