What are your personal goals and boundaries for the Veggie board?

It would be nice to have clarification of what the goals and boundaries of this board actually are. What are yours?

It was my initial impression that it would be a place where one could share the benefits of learning how to eat (at least some meals) absent animal meat, and at least part of the time towards improving our health, thus decreasing our exposure to toxins and unhealthy food demons... and actually enjoy them!

In my personal experince, veggie eating can be absolutely and wonderfully palatable, absent deprivation, amazingly surprising even to me. Even so, old habits and tastebuds for some things can be slow to die for some of us. (I still love homemade chicken noodle soup, Thanksgiving turkey, St. Patrick's cornbeef, and roast beef at Christmas). These things are tied in with nice memories of the past.

No matter how often you eat IBS-safe turkey, chicken, and fish is not necessarily the issue for everyone. Learning to not eat some things as often can help one's overall health, and help save our world as we know it.

Thus supplementing with vegetarian here and there can be of benefit to new ideas, general health, and even excitement to wake up our taste buds while improving our health, quality of life, and longevity absent unwelcomed disasterous diseases that might easily be avoided with some simple education and encouragement. Meanwhile, we are helping stomp out cruelty to animals, wasted lands for growing grains to feed them (while humans are starving), etc. etc.

For me, much has to do with seasoning recipes to my personal palate. Good sources for organic products are helpful to me, and I welcome those. I prefer organic for a number of reasons, including avoiding a lot of toxins that are not good for our bodies and can often cause health issues. I also welcome sources for good quality peripheral food products (brands, etc.) and recipes.

I do hope that soon we have a category for veggie recipes (or an icon to flag them) on the Eating for IBS board. Heather and staff is working on this.

I am fully aware that organic products are somewhat more costly. Even so, I would rather eat the best I can and enjoy my meals, rather than spend more than this difference on doctor bills for health issues.

What are your personal goals and what do you think the boundaries of this board should be as far as input towards that... i.e. what you you find helpful? What would not be helpful?
