These are just yummy--and very easy to make, especially if you already have some cooked rice lying around.
1/2 onion, minced 1 celery stalk, minced (add less if worried about celery. I used half a stalk) 1 1/4 c. mashed potatoes 1 c. cooked white rice 1/4 c. tomato paste 1/2 tsp. salt 1/2 c. soy cheese, grated
Preheat oven to 350 F.
Saute onion and celery in a pan sprayed with Pam or other oil. Combine all ingredients and form into 1 1/2" balls. Lightly spray baking sheet, place balls on baking sheet.
Bake on top rack of oven for 20 minutes, until browned.
