Long story short, I am not a celiac, but trying to avoid wheat flour as much as possible. It really sets things off! I have had a lot of trouble baking gluten-free. The bread doesn't rise properly and the cookies crumble. I realize that's the nature of rice flour, etc. but it's like learning to cook all over again. But I keep trying!
