I found the salmon risotto recipe doing a search the other day. It is AMAZING. I can't say enough about it. It tasted just as creamy and delish as any risotto I've ever had, and there's no cream or butter! Thanks so much for posting it. It was also one of the easiest risottos I've ever made. Mmmmm yummy.
