Irritable Bowel Syndrome Message Boards | Attention Muffin Lovers!

Here's two recipes I've tried that passed the taste test -my husband's taste test included!

Banana Blueberry Muffins

Sift and stir:
2c flour
2t baking powder
1/4t baking soda
1/2c caster sugar

Combine in small bowl and beat until smooth:
2T apple sauce
1T canola oil
1/2c orange juice
4 egg whites
2t vanilla
1 large ripe mashed banana
1/2c blueberries (fresh or frozen)

Combine wet and dry and pour into lightly sprayed muffin pan. Sprinkle with cinnamon.

Bake at 390 for about 12 mins or until muffins spring back when touched in centre.

makes 12 medium muffins

Chocolate Muffins

Sift and stir:
1 3/4c flour
1t baking soda
1c caster sugar
1/4c cocoa

Combine and stir:
4T apple sauce
1T canola oil
2 egg whites
1 cup vanilla soy yoghurt
1/2c soy milk
1t vanilla

Combine wet and dry and fold until flour is dampened but not smooth.

Divide evenly amongst 12 lightly sprayed muffin pans.

Bake at 390 for about 12 mins or until centres spring back when touched lightly.
