Here's another Bisquick recipe from way back. I made it often because hubby and I loved it. It's very much like a Quiche, and it's excellent.
EASY GARDEN VEGETABLE PIE
2 cups chopped fresh broccoli 1/2 cup chopped onion 1/2 cup chopped green pepper 1 cup shredded soy cheddar 1-1/2 cups soy milk 3/4 cup Bisquick 3 eggs (use Egg Beaters) 1 teaspoon salt 1/4 teaspoon pepper
Heat oven to 400 degrees. Lightly grease 10-inch pie plate. Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling. Add broccoli, onion, and green pepper; cover and heat to boiling. Cook until amost tender, about 5 minutes; drain thoroughly. Mix with cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes before cutting. Garnish as desired. Refrigerate any remaining pie.
