This is a Bisquick recipe that I used to make a lot; it originally called for broccoli, but I preferred spinach. It comes out equally as well either way:
2 pkgs. (10 oz. ea.) frozen chopped spinach, defrosted 1 cup Bisquick 1 cup soy milk 2 eggs (use "Egg Beaters") 1/2 teaspoon salt 1 cup shredded soy cheddar
Heat oven to 325. Spray souffle dish or 1-1/2-qt. casserole with Pam. Drain spinach. Beat baking mix, milk, eggs and salt with hand beater until smooth. Stir in spinach and cheese. Pour into souffle dish and bake until knife inserted halfway between center and edge comes out clean, about 1 hr. Serve immediately.
