2 1/2 lbs. russet potatoes, washed, peeled, cut in wedges 1/2 tsp. pepper 1 tsp. salt 1 tbsp. Mexican seasoning Put everything in plastic resealable bag. Shake to coat fries evenly. Put fries on baking sheet sprayed with cooking spray. Bake 425F, 30 min. or til fries are golden brown, turning occasionally. Serve with a vegan burger, vegan sandwich, etc.
