4 oz lasagna noodles, cooked 1 onion, chopped 1 tsp Soy Garden Natural Buttery Spread (the original recipe called for 2 T butter..this is what I used to sub) 2 c mashed potatoes (The original recipe used leftover mashed potatoes. I made mine fresh with soy milk, salt, pepper, & small amount - probably like 1/4-1/2 tsp - of Soy Garden Natural Buttery Spread) 1 c grated soy cheddar cheese salt & pepper
Preheat oven to 350 F. Spray casserole dish with non stick spray.
Melt Soy Garden Natural Buttery Spread in non stick pan. Sauté onions till softened & beginning to brown.
Combine cheese & mashed potatoes, salt & pepper to taste. (I didn't add additional salt & pepper since they were already in my mashed potatoes.)
Layer noodles in bottom of casserole. Add a layer of potato mixture, then some onions. Repeat layer finishing with onions.
