1 lb boneless, skinless chicken breasts, chopped 1 each green, red peppers cut into thin strips 1 chopped onion 2/3 cups fat free Italian dressing flour tortillas 1/2 c. salsa Shredded soy parmesan for garnish Shredded lettuce if desired
Marinate chicken in salad dressing for 30 minutes. Cook the chicken and onion and peppers in about half of the dressing until the chicken is cooked and the veggies are tender. Place some in a tortilla, add salsa, soy cheese and lettuce. Serve with a side of rice.
