Betty's Flour Tortilla Recipe!

This is a great IBS safe recipe for homemade flour tortillas. Thank you Betty!

Flour Tortillas Recipe
2 cups enriched, unbromated, enriched flour
1 teaspoon lite Morton's salt
about 1/2 cup WARM water (more or less)
3 tablespoons olive oil

Mix flour and salt (I use a whisk); mix in the olive oil (I drip over the flour and mix well with a fork); begin to add the WARM water by dribbling a little at a time until the dough forms and cleans sides of bowl.

Knead for a little bit and divide into the amount and size of tortillas you desire (I usually make 8 to 10 tortillas). Shape each part into a ball, rub a little olive oil on your palms and coat the dough balls. Place the dough balls in a plastic bowl with a lid and let them sit for 20 minutes. Roll out your tortillas.

On a med/hot griddle or tortilla sheet, place the flat tortilla on one side for 30 to 60 seconds (it'll bubble a teeny bit), turn over for 30 seconds (until desired "look"), then turn back to first side and finish cooking. You may refrigerate leftovers for another meal on the same day or the next.

I serve them with guacamole slices w/dash of Morton's lite salt, or a slice of soy cheese, in place with white egg omelete for breakfast, or whatever I like.
