I went to Trader Joe's today and they had samplings of pumpkin butter with sliced apples. It was so delicious that I bought a jar and already dug in today. I dipped both a peeled apple and pretzels in the butter and it was delicious. I've found ideas to put it in oatmeal or on toast, and you can also marinate chicken in it or use it for a baking. Ingredients are minimal and safe: pumpkin, sugar, honey, lemon juice concentrate, spices. It's low in fat and calories (40 cal. per tbsp.)

Can pumpkin butter be used to replace oil in baking recipes such as brownies or cakes?
