There's a lot of food chemistry involved. Your best bet might be to get a gluten free baking cookbook, and then modify those recipes to be IBS friendly. Substitute soy milk for dairy, use two egg whites for each whole egg, decrease the oil and increase the fruit purees, etc. That will probably be easier than starting with an IBS recipe and trying to swap out the wheat flour for gluten free flours.
