rotisserie chicken and rice salad

I had to make a very quick dinner last night and rotiss chickens were on sale (I still break down and eat poultry occassionally). I made some jasmine rice and topped it with pieces of hot chic breast. Then I took about 4T sugar 4T fish sauce 3T veg broth and 1 lime juice and heated to dissolve the sugar. I topped the rice and chicken with the pregrated carrot in a bag, strips of bell pepper, scallions and mint and basil then poured the dressing over. We had minced hot Thai pepper with it too. It was very good. The contrast of hot and cold was nice.
Make the dressing to your taste.
