Mexican Meatballs

Made this up for dinner tonight and it was wonderful!

Ingredients:

2 lbs lean ground turkey
1 cup quick cooking oats
1 cup salsa (divided)
4 cloves garlic
1/4 tsp cumin
1/4 tsp chili powder
1/4 tsp onion powder
2 cans (15 oz each) tomato sauce

Combine all ingredients except the tomato sauce (and only 1/2 cup of the salsa) in a large bowl. Spray a large deep skillet with enough cooking spray to cover the bottom. Form the mixture into 1 1/2 inch balls and place in the skillet to brown. Once they are browned on all sides, add the 2 cans of tomato sauce and remaining 1/2 cup of salsa to the pan. Stir gently and allow sauce to come to a boil. Cover and reduce heat. Let simmer for 20 minutes or until the meatballs are no longer pink in the middle.

I served it over white rice and it was delicious!
